Tannic acid is a polyphenolic organic compound widely present in plants. In terms of chemical properties, tannic acid can form insoluble complexes with proteins, alkaloids, and various metal ions due to the presence of a large number of phenolic hydroxyl groups in its molecular structure. For example, its aqueous solution can form a blue black precipitate when it comes into contact with iron salts. This characteristic of binding to proteins is the basis for many of its applications and sensory experiences.
